    Functional Overview

What Is Allulose? A Rare Sugar with Sugar-Like Taste and Fewer Calories

Allulose, also known as D-Allulose or D-Psicose, is a rare sugar and a simple sugar (monosaccharide) closely related to fructose. This rare sugar occurs naturally in very small amounts in figs, raisins, jackfruit and wheat. Commercial Allulose is produced through the enzymatic conversion of fructose.

Allulose has a clean, sugar-like taste and approximately 70% of the sweetness of regular sugar. Unlike many other sugar substitutes, Allulose dissolves, browns, adds bulk and softens texture during cooking. With only approximately 0.2–0.4 kcal per gram, Allulose provides a small fraction of the calories in regular sugar, which contains about 4 kcal per gram.

    Key Characteristics of Allulose

Allulose Sweetness: Approximately 70% as sweet as regular sugar, with a clean taste and no bitter aftertaste.

Allulose Calories: Approximately 0.2–0.4 kcal per gram, compared with about 4 kcal per gram for regular sugar. Confirm the applicable calorie labelling value under Indian regulations.

Allulose for Baking: Browns through the Maillard reaction, helping produce sugar-like colour and aroma in baked products.

Allulose for Ice Cream: Lowers the freezing point and helps keep ice cream soft and scoopable.

Allulose as a Sugar Substitute: Retains moisture and adds bulk, allowing a 1:1 replacement by weight in many recipes, with a sweetness top-up.

Allulose Digestive Tolerance: Very large single doses may cause stomach discomfort, so formulations should be tested.

"A naturally occurring rare sugar with near-zero calories and zero glycaemic impact — delivering the Maillard browning, caramelisation, and functional behaviour of real sugar in clean-label formulations."

    Maillard Browning & Caramelisation

The only low-calorie sweetener that browns and caramelises like sucrose. Enables authentic crust formation and colour development in baked goods.

    Near-Zero Caloric Contribution

At 0.4 kcal/g vs sugar's 4 kcal/g, allulose reduces caloric density by 90% while maintaining full sugar-like functional behaviour.

    Freezing Point Depression

Lowers the freezing point of ice cream and frozen desserts — resulting in smooth, scoopable texture without icy consistency.

    Clean Regulatory Profile

FDA GRAS status. Not required to be counted as "added sugar" on US nutrition labels — a powerful claim advantage for export-oriented brands.

AltSugar™ — Allulose Importer and Supplier in India

AltSugar™ is a pioneer importer of next-generation sweeteners in India, alongside Monk Fruit, Stevia, Erythritol, Xylitol and Thaumatin. We introduced Date Sugar, Powder, Paste and Syrup over six years ago and brought Monk Fruit Extract to India when very few manufacturers knew it. Allulose follows the same belief: give Indian makers better alternatives to sugar before the market demands them.

We import Allulose from China; we do not claim to manufacture it. We source it, test it, explain it and support manufacturers with samples, documents and application guidance for Allulose supply in India.

    • Direct Allulose importer: no layers of traders
    • Allulose application support: help for baking, frozen and beverage trials

    Typical Applications

Allulose Applications for Bakery, Ice Cream and Beverages

Allulose is used in bakery products, ice cream, frozen desserts, beverages, syrups, confectionery, chocolate, sauces, jams, dairy and nutraceuticals. Allulose for bakery supports sugar-like bulk, softness and browning, while Allulose for ice cream helps maintain a soft, scoopable texture. Allulose for beverages adds body and mouthfeel, and its applications in other food products depend on formulation trials and the required use levels.

    Bakery: Cakes, Cookies and Breads

Replaces sugar's bulk, softness and browning, so baked goods look and feel conventional. Often combined with a high-intensity sweetener to match full sweetness.

    Ice Cream and Frozen Desserts

Lowers freezing point, keeping product soft and scoopable and giving smooth texture with reduced sugar.

    Beverages and Syrups

Dissolves cleanly, adds body and mouthfeel to reduced-sugar drinks. Often paired with Stevia or Monk Fruit.

    Confectionery and Chocolate

Gives sugar-like texture, colour and chew in candies, caramels, sauces and fillings.

    Sauces, Jams and Dairy

Adds sweetness, body and gloss with less sugar; works in yogurts, jams and dessert sauces.

    Nutraceuticals and Protein Products

Used as a sugar-like, low-calorie carbohydrate in bars, powders and sachets.

    Frequently Asked Questions About Allulose

Allulose, also called D-Allulose or D-Psicose, is a rare sugar found in tiny amounts in figs, raisins and jackfruit, and commercially made by enzymatic conversion of fructose. It tastes like sugar with very few calories.

About 0.2–0.4 kcal per gram, compared with about 4 for sugar. Please refer to our specification for the labelling value.

Yes, it is a rare simple sugar, but the body does not use it like ordinary sugar, which is why it contributes so few calories.

Allulose occurs naturally in small amounts in some fruits and in wheat; commercially it is produced by enzymatic conversion of fructose.

Allulose is about 70% as sweet as sugar and browns, bulks and softens like sugar, but with far fewer calories.

Erythritol is a near-zero-calorie bulk replacer that does not brown well and can feel cooling. Allulose browns and keeps a soft texture, so it suits baking and ice cream. They are often combined.

Allulose is a low-calorie sugar replacer. Trehalose is a calorie-providing functional sugar valued for stability and texture. See our Trehalose page.

Yes. It browns through the Maillard reaction and retains moisture, so baked goods look and feel like sugar-containing ones. Browning can be faster, so oven settings may need adjusting.

Allulose is used widely in several countries. Very large single servings may cause stomach discomfort, so we recommend testing quantities in your formulation.

Please contact us for current regulatory guidance for your product category and the documents we can provide.

We offer a Monk Fruit and Allulose blend (see our Monk Fruit Extract page). Other blends can be discussed.
